Shave Ice and island grindz comes to Douglas County!
Wailani first opened as a small mobile shave ice truck in May of 2021 at Stewart Park in Roseburg, Oregon and quickly gained a huge following for their unique and delicious shave ice creations. In May 2022, Wailani expanded to include a brick-and-mortar location for year round shave ice desserts to accompany their mobile shave ice truck. In 2023, Wailani introduced their Island Grindz food truck serving authentic Hawaiian plate lunches and Vietnamese BBQ.
Owner Lan Ha brings with her over 15 years of food industry experience after graduating from Oregon State University. Lan was born in Vietnam and immigrated to the United States as a child. Lan has always had a passion and love for cultural desserts and food. After a trip to Hawai'i, Lan fell in love with shave ice and the culture behind it. Lan set out to make her dream of operating a shave ice business into reality. Lan, along with her husband, Ryan, and their son, Kellan, moved back to Douglas County to be closer with family and spread the joy of shave ice with everyone.
Owners Tim and Anela Plunkett were born and raised in Hawai’i. The Plunkett family moved from the North Shore of O’ahu in 2016 and have grown roots here in Douglas County. Tim played music professionally and is currently a first responder. Anela graduated from Pacific University and Lewis & Clark here in Oregon before becoming an educator. The couple has three children together who keep them busy and serve as a constant reminder of what’s important in life.
